2 whole eggs

1 tsp of olive oil

½ vine ripe tomato

¼ red onion

1 tbs fresh cilantro (1 tsp dried)

1 jalapeno (optional)

Salt & pepper to taste

½ avocado


Chop tomato onion and optional jalapeno and place on the side. 

Slice the half of avocado.  Place 2 eggs in a bowl and add a tablespoon of water to them.  Whisk them. 

Heat up a small pan and add olive oil.  Once heated up, add your whisked eggs.

Add salt, pepper and cilantro to the eggs while they’re cooking. 

Place on a plate and top with chopped onion, tomato & jalapeno. 

Place sliced avocado on the top of your omelet.
