BISON PUMPKIN CHILI

Fall is here, and who doesn't love some warming foods?! I know I do. I love soups and chilis...it just warms my soul (ya know?) This is a delish recipe that is all real food and super nutritious! Try it out this fall and winter!

Ingredients

-1 tbsp. extra virgin olive oil

-1 lb. ground bison

-1 yellow onion (diced)

•3 garlic (cloves, minced)

•2 tbsps, chili powder

•1 tbsp. cumin

•1 tsp. paprika

•1 cup crushed tomatoes

•1 cup pureed pumpkin

•1 cup water

•1 1/2 tsps. maple syrup

•1 tsp. sea salt

•4 cups coleslaw mix

Directions

1) Heat olive oil in a large skillet over medium-high heat. Add the ground bison, onion and garlic, and sautee for about 5 to 7 minutes, or until the meat is cooked through. Drain off the fat.
2) Add the chili powder, cumin and paprika. Stir about 1 minute, until fragrant. Add crushed tomatoes, pumpkin, water, maple syrup and salt. Let simmer about 10 minutes.
3) Divide coleslaw into bowls. Top with chili and enjoy!
